In China, soybeans have been eaten by humans for more than 5,000 years and, in the Western world, for nearly two hundred years - but mostly by cows.

Unlike other substances that lower cholesterol (such as oats), soy products only reduce the bad cholesterol and save the good cholesterol.

Soluble fibres also help diabetics regulate their glucose, reducing insulin dependency.

Soya is also a rich source of vitamin E which prevents oxidation of cholesterol. Think of oxidised cholesterol as rancid fat that has a particular fondness for your arteries.

Another main component in Soya, genistein, not only interferes with the multiplication of cells that make up artery plaque, it even reduces blood clotting - much like aspirin but without the side effects.

Saponins in soy not only have anti-oxidant properties and lead to lower cholesterol but, according to some experts, they also have anti-cancer and antiviral activities.

An important group of Soy proteins, called isoflavones, are a hormone-type substance (phytoestrogen) that help maintain hormonal balance in our bodies.

In men, this prevents the conversion of testosterone to a substance that leads to prostate enlargement.

In women, they modulate the effect of oestrogen, follicle stimulating hormone (FSH) and luteinizing hormone. This can lead to a reduction or prevention of hot flushes, better cognitive functioning during menopause, as well as decreasing the risk of breast cancer and of osteoporosis.

In one study in Illinois, it was shown that the isoflavones actually increased calcium absorption in the bones, thereby increasing bone density by 3% in post-menopausal women, as compared to the continual loss in the control group.

Isoflavones also decrease the risk of cancer of the colon, lung, prostate, skin and leukaemia by slowing down the growth of cancerous cells.

Animal protein, high in saturated fat, also deplete calcium in the body. Calcium, vital for bone strength, also plays a vital role in the transmission of nerve impulses to the
muscles of the body and the heart.

Plant sourced proteins, however, do not have this effect.

Not only is Soy a source of first class protein, it is also naturally rich in calcium, magnesium and boron - essential minerals which work together to maintain healthy bones throughout life. (Your body cannot use calcium without some magnesium and boron)
